I am not a chef, but I love food and cooking.
For me, cooking is a journey: I often make mistakes; I don’t always do as I am told; and I get a lot of happy accidents. I can also become incredibly frustrated when a recipe fails. In fact, a failed recipe can become an obsession. I also like to be challenged when I cook. I like complexity and seeing an idea come into fruition. I cook for myself, which is why I am not a chef. I cook the way I like to eat. Namely, I like food that is flavourful, well seasoned, and spicy. Many of my recipes for savoury foods will have chilies as I can tolerate a lot of heat in my food. I will try to cut back, but beware, these recipes are usually spicy. I also look for texture, lightness, or depth. I often get asked for recipes, but because I love to cook more than I like to document, I haven’t been sharing many. Hopefully this blog will change all of that. It will be a notebook of how I cook, why I cook, and my struggles with cooking. As I mentioned above, I don’t tend to rigidly follow a recipe. Instead, I usually combine different recipes from TV, the internet, friends, or cookbooks I have at home.
